Baked Chicken
   Alvin W. Fitzpatrick Serves 2-3
 
Ingredients:
  • 1 3-4 lb. chicken
  • 2 stalks of celery
  • 1 small onion
  • 3 cloves of garlic
  • 1 tsp. oregano
  • 1/3 stick of butter
  • salt and pepper to taste


Clean and trim chicken... salt and pepper well. Stuff chicken with celery, onion, garlic, oregano, and condiments 1/3 stick butter (more if larger than a 4 lb chicken)

Bake at 275 degrees for an hour covered, then remove cover, turn oven to 400, bake 15 to 20 minutes, then pour can of gravy over chicken, cover chicken, put oven back down to 275 (or lower if cooking too fast) and cook for another hour. Check legs for doneness...

If it is starting to come away from the bone, it's ready.

After chicken is baked halfway, add a can of Franco-American Chicken Gravy.
