Baked Zucchini
   Brian Fitzpatrick (Based on Mimi's Zucchini) Serves 6 to 8
 
Ingredients:
  • 5 zucchini squash
  • 1 sm. onion chopped finely
  • 1 tbsp. margarine
  • 1 cup chopped celery
  • 1 1/2 cup grated parmesan (or romano)
  • 1/2 bread crumbs plus some extra for sprinkling on top(Italian style preferred)

Saute onion and celery in margarine until soft. Add zucchini, then simmer for 3 more minutes, pour all into lidded oven casserole dish, add cheese and bread crumbs and mix well. Cover and bake at 350 degrees for 15 minutes. If you cook longer, the zucchini will be very mushy. ick.
