Fried Chicken
   Brian Fitzpatrick Serves 3-4
 
Ingredients:
  • 1 whole fryer chicken (3-5 lbs)6
  • 1 c. flour
  • 1 c. homemade bread crumbs
  • 1/4 c. Parmesan cheese, grated
  • 2 eggs
  • Vegetable Oil
  • 1 tsp. oregano
  • 2 tsp. garlic powder
  • salt and black pepper to taste

Clean, debone and fillet chicken. Mix flour and half the seasonings in one bowl. Mix bread crumbs, half the seasonings and the Parmesan cheese in another bowl, and beat the eggs into a third bowl. Dip chicken into the flour, then the egg, then into the bread crumbs--repeat for extra crunchy/thick breading.

Heat oil to 375 degrees in your frying pan, and fry chicken until golden brown on both sides. Remove and let drain on paper towel.
